We have been making this recipe for few months now, and it is truly the very healthy chocolate muffin around.
Who wouldn’t love the organic goodness with whole grain and chocolate chips – this muffin has good amount of fiber as well.
Ingredients:
1/4 cup hot water
2 tablespoon instant coffee powder
2 tablespoon flaxseed meal
1/2 cup buttermilk
1/2 cup vegetable oil
2 large organic eggs
1 teaspoon vanilla extract
3/4 cups organic graham flour
1/2 cup whole wheat flour
1/2 cut all purpose flour
1/2 cup organic sugar
1/2 cup organic brown sugar
3 tablespoons organic unsweetened cocoa powder
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 cup milk dark chocolate chips
Preheat oven to 375°F. Stir 1/4 cup hot water and instant coffee powder in medium bowl until coffee powder dissolves. Add buttermilk, oil, eggs and vanilla and whisk until well blended. Mix graham flour, wheat flour, all purpose flour, sugar, brown sugar, cocoa, baking powder, baking soda, flaxseed meal and salt in large bowl. Add the wet ingredients to the dry mixture and stir until combined. Mix in chocolate chips.
Spray 12 cup muffin pan with nonstick cooking spray. Divide batter equally among prepared muffin cups.
Bake until tester inserted into center of muffins comes out clean, about 20 minutes.
Transfer muffins to rack, brush the muffin tops with butter and cool. Brushing with butter prevents the muffin from drying out.
