Beet/Beetroot – you got to love this root vegetable. Beets are high in dietary fiber, folate, potassium, manganese, vitamin C, iron and magnesium.

Here is the recipe for Beet Rice – this rice has a mild sweet taste of beets and a hint of spiciness with chillies.
Ingredients:
2 Beets – shredded
1/2 tsp fennel seeds
4 garlic cloves
ginger to taste
green chillies per taste
mint 2 sprigs
cilantro handful
1 diced tomato
1/2 onion cut into wedges
1/2 cup of coconut milk
cardamom/cinnamon/bay leaf/star anise – per taste
few cashews
1 cup basmati rice -soaked 1/2 hr, completed drained, and fried in 1/2 tsp ghee/butter
2 tablespoon ghee/oil
For masala – grind 1/2 tsp fennel seeds, 4 garlic cloves, ginger, green chillies, mint sprigs, and cilantro.
Directions:
- In a pressure cooker add 2 tbsp ghee/oil, fry cashews and other spices
- Add onion wedges followed by ground masala and fry then until raw smell is gone.
- Then add tomatoes, followed by shredded beets and continue frying
- Now add rice and fry this for 2 min
- Add coconut milk followed by 1 and 3/4 cup water
- Add salt per taste and cook until the pressure cooker gives you 3 whistles
